Kimchi Rice Porridge

Ingredients

Porridge:

  • 1/2 cup glutinous rice
  • 2 1/2 cups reduced sodium vegetable broth
  • 1/2 cup chopped kimchi, 1 thumb ginger

 

Toppings:

  • 3 bricks Weet-Bix Original
  • 3 Tbs spring onion
  • 6 small sheets toasted seaweed
  • 3 tsp toasted sesame seeds
  • 1/4 tsp sesame oil
  • Tamari to taste

Method

  1. Soak the glutinous rice in water overnight, then strain.
  2. Place the strained glutinous rice and the rest of the porridge ingredients into a small pot and bring to a boil. 
  3. Bring down to low heat and cook for 10-15 minutes or until rice if fully cooked. 
  4. Top with Weet-Bix Original, spring onion, seaweed, sesame seeds, sesame oil.
