Kimchi Rice Porridge

Ingredients
Porridge:
- 1/2 cup glutinous rice
- 2 1/2 cups reduced sodium vegetable broth
- 1/2 cup chopped kimchi, 1 thumb ginger
Toppings:
- 3 bricks Weet-Bix Original
- 3 Tbs spring onion
- 6 small sheets toasted seaweed
- 3 tsp toasted sesame seeds
- 1/4 tsp sesame oil
- Tamari to taste
Method
- Soak the glutinous rice in water overnight, then strain.
- Place the strained glutinous rice and the rest of the porridge ingredients into a small pot and bring to a boil.
- Bring down to low heat and cook for 10-15 minutes or until rice if fully cooked.
- Top with Weet-Bix Original, spring onion, seaweed, sesame seeds, sesame oil.
