Creamy Corn and Malunggay Soup

Ingredients

4 white corn

3 cups low sodium veggie broth

3 minced cloves garlic

1 finely chopped medium onion

1/2 tsp salt

1/2 tsp black pepper

2 cups So Good Oat Unsweetened Milk

1 cup malunggay leaves

Method

  1. Remove the corn kernels from the cob with a knife.
  2. In a large pot add in the corn kernels, vegetable broth, salt, garlic and onion and bring to a boil.
  3. Cook on medium heat until corn is cooked.
  4. Add in the So Good Oat Unsweetened Milk and simmer for 5 minutes.
  5. Add in the malunggay leaves and stir for 1 minute.
  6. Remove from heat, and serve.
