Weet-Bix Mung Bean Parfait

Ingredients

  • 250g red mung bean
  • 3 cups water
  • 1/4 cup raw sugar
  • 10 bricks Weet-Bix Original Cereal/li>
  • 3 cup So Good Soy Regular

Toppings

  • 5 bananas
  • 10 medium-large strawberries

Method

  1. Soak the red mung bean in water overnight.
  2. Place the red mung bean and 3 cups of water in a pot and bring to a boil, then continue to cook on medium low heat until soft.
  3. Mix in the raw sugar and 1/2 cup So Good Soy Regular. Set aside and let cool.
  4. Layer your glass with Weet-Bix, red mung bean paste, and chopped fruit, then pour the So Good Soy Regular before you eat.
