Sweet Mungbean Soup

Ingredients
1/2 cup raw mung bean
5 cups water
1/4 cup coconut sugar
1/4 cup lite coconut milk
1/2 cup So Good Soy Regular Milk
Method
- In a pot, toast the mung beans, mixing occasionally, until mostly brown.
- Add in the water and bring to a boil.
- Bring to medium low heat and cook for 15-20 minutes or until mung beans are soft.
- Add in the coconut sugar, lite coconut milk, and So Good Soy Regular.
- Simmer for 5-8 minutes.
