Red Bean Ice

Ingredients

  • 250g red mung bean
  • 3 cups water
  • 1/4 cup raw sugar
  • 2 1/2 cups Ice
  • 3 cups So Good Almond Original

Optional:

  • vanilla ice cream

Method

  1. Soak the red mung beans in water overnight.
  2. Strain the mung beans and place into a small pot with 3 cups of water and 1/4 cup of raw sugar and cook until soft and firm, about 40 minutes on medium low heat.
  3. Set aside and let cool.
  4. Serve with crushed ice and So Good Almond Original.
