Red Bean Ice

Ingredients
- 250g red mung bean
- 3 cups water
- 1/4 cup raw sugar
- 2 1/2 cups Ice
- 3 cups So Good Almond Original
Optional:
- vanilla ice cream
Method
- Soak the red mung beans in water overnight.
- Strain the mung beans and place into a small pot with 3 cups of water and 1/4 cup of raw sugar and cook until soft and firm, about 40 minutes on medium low heat.
- Set aside and let cool.
- Serve with crushed ice and So Good Almond Original.
