Pineapple Golden Curry

Ingredients

  • 2 medium onion
  • 5 cloves garlic
  • 2 thumbs ginger
  • 2 Tbs grapeseed oil
  • 1 tsp cumin powder
  • 2 Tbs curry powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 reduced sodium vegetable bouillon
  • 1/4 cup water
  • 1 small pineapple
  • 1/2 cup chopped celery
  • 3 small bell pepper
  • 1 whole cauliflower
  • 300g tofu
  • 1/4 cup lite coconut milk
  • 1 cup So Good Oat Unsweetened
  • Cilantro (topping)

Method

  1. In a food processor or blender, blend the onion, garlic, celery, and ginger until you have a paste.
  2. In a pot, preheat the grapeseed oil then add in the paste and sauté until slightly translucent.
  3. Add in the cumin and curry powder and mix well, cooking for 1-2 minutes.
  4. Add in 1/4 cup water, salt, chopped pineapple, cauliflower, bell pepper, and vegetable bouillon, mix well, then cover and cook in medium low for 7 minutes. Add in the coconut milk, So Good Oat Unsweetened, and air fried tofu.
  5. Simmer for 5-10 minutes or until the cauliflower is nice and tender.
  6. Top with cilantro and serve with rice or carbohydrate of choice.
