Pineapple Cookies

Ingredients
Pineapple Jam:
- 250 pineapple
- 1 Tbs sugar
Dry Ingredients:
- 3/4 cup whole wheat flour
- 1/8 tsp baking powder
- Pinch of salt
Wet Ingredients:
- 2 Tbs sugar
- 2 Tbs canola oil
- 2 Tbs Almond Vanilla
- 2 bricks Weet-Bix Original Cereal
Method
Pineapple Jam:
- Blend the pineapple and sugar until smooth.
- Transfer to a small pan and cook on medium low until thick.
- Pre-heat the oven to 170 degrees celsius.
- Sift the dry ingredients into a bow.
- Mix the wet ingredients together and fold into the dry ingredients.
- Divide the batter into 6 cookies, place on a baking tray, and bake for 25-30 minutes.
