Pandan Coconut Jelly

Ingredients
Pandan Jelly:
- 4 pandan leaf
- 1 1/2 cup water
- 2 Tbs raw sugar
- 1/2 tsp agar-agar powder
Soy Jelly:
- 1 1/4 cup So Good Soy Regular
- 3/4 tsp agar-agar powder
- 1 Tbs raw sugar
- 1/2 cup young coconut meat
Method
- In a small pot mix the So Good Soy Regular with the agar-agar powder and raw sugar. Bring to a boil then pour into a heat-friendly container.
- Let chill for 1-2 hours to set.
- Place the pandan and water in a blender and blend until smooth.
- Strain with a cheesecloth then transfer to a small pot and bring to a boil, mix in the raw sugar, and agar-agar powder and mix well.
- Pour over the soy jelly and chill for 1-2 hours to set.
- Top with fresh grated young coconut.
