Coconut Tapioca Pudding

Ingredients
2 1/4 cup water
2 pandan leaf
1/2 cup small sago
1/2 cup So Good Soy Regular
2 Tbs lite coconut Milk
Pinch of salt
1/4 cup coconut sugar
Method
- In a pot, bring the water and pandan leaf to a boil, then simmer for 3 minutes.
- Remove the pandan leaves.
- Add in the sago, So Good Soy Regular, lite coconut milk, coconut sugar, and salt.
- Simmer for 10-15 minutes, stirring often.
- Remove from heat and let cool.
- Serve warm or chilled and top with your choice of fruit.
