Coconut Tapioca Pudding

Ingredients

2 1/4 cup water

2 pandan leaf

1/2 cup small sago

1/2 cup So Good Soy Regular

2 Tbs lite coconut Milk

Pinch of salt

1/4 cup coconut sugar

Method

  1. In a pot, bring the water and pandan leaf to a boil, then simmer for 3 minutes.
  2. Remove the pandan leaves.
  3. Add in the sago, So Good Soy Regular, lite coconut milk, coconut sugar, and salt.
  4. Simmer for 10-15 minutes, stirring often.
  5. Remove from heat and let cool.
  6. Serve warm or chilled and top with your choice of fruit.
