Ingredients

1 cup glutinous rice

1 cup water

3 pandan leaves

2 cups light coconut milk

1 cup So Good Soy Regular Milk

1/2 cup coconut sugar

Pinch of salt

Grape seed oil (for lining your pan)

Method

  1. Pre-heat oven to 200 degrees Celsius.
  2. Rinse and strain your glutinous rice
  3. Place 1/2 cup of water, 1 cup coconut milk, and the glutinous rice into a pot with the pandan leaves. Bring to a boil then simmer for 5 minutes.
  4. In a separate pan, add in 1 cup coconut milk, So Good Soy Regular Milk, coconut sugar and salt.
  5. Mix and bring to a boil and simmer for 5-10 minutes or until thick.
  6. Remove the pandan leaves from the rice, add in most of the sauce mixture, leaving some for the top, and mix until well incorporated.
  7. Oil or butter a baking pan and transfer the rice mixture and spread evenly.
  8. Pour in the rest of the sauce and spread.
  9. Place in the oven and bake for 20-30 minutes.
