Avocado Flan

Ingredients

Coconut caramel:

1/4 cup coconut sugar

1 tsp water

Flan:

150g avocado

1 1/2 cup So Good Oat Unsweetened

3/4 tsp agar-agar powder

2 Tbs coconut sugar

1/4 tsp vanilla extract

Pinch of salt

Method

  1. Place the coconut sugar in a small pan and 1 tsp water, and heat up to medium heat then transfer to a heat friendly container.
  2. Place the So Good Unsweetened into a small pot and whisk in the agar-agar powder and bring to a boil.
  3. Remove from heat and place in a blender with the avocado, coconut sugar, vanilla extract, and pinch of salt and blend until smooth.
  4. Pour into the container with the coconut caramel.
  5. Chill for 4 hours.
