Ingredients

Dry Ingredients:

  • 1 cup wholemeal flour
  • 1 Tsp baking powder
  • Pinch of salt

Wet Ingredients:

  • 2 Tbs raw sugar
  • 1 Tbs grapeseed oil
  • 1 cup + 2 Tbs So Good Almond Unsweetened

Filling:

  • 2 tsp vegan butter
  • 4 Tbs crushed peanuts
  • 4 Tbs creamed corn
  • 2 bricks Weet-Bix Original Cereal
  • Liquid sweetener to taste

Optional:

  • 2 tsp canola oil for cooking

Method

  1. Sift the dry ingredients into a bowl and mix.
  2. Mix the wet ingredients together.
  3. Pour the wet mix into the dry mixture and mix well.
  4. Pre-heat a pan to medium low heat.
  5. Pour 1/4 of the batter onto the pan and cook until the whole pancake is dry, no need to flip.
  6. Repeat with the rest of the batter.
  7. Spread the vegan butter on the pancakes, then fill with crushed peanuts, creamed corn, crushed Weet-Bix Original Cereal, and sweeten to taste.
