Ingredients
Dry Ingredients:
- 1 cup wholemeal flour
- 1 Tsp baking powder
- Pinch of salt
Wet Ingredients:
- 2 Tbs raw sugar
- 1 Tbs grapeseed oil
- 1 cup + 2 Tbs So Good Almond Unsweetened
Filling:
- 2 tsp vegan butter
- 4 Tbs crushed peanuts
- 4 Tbs creamed corn
- 2 bricks Weet-Bix Original Cereal
- Liquid sweetener to taste
Optional:
- 2 tsp canola oil for cooking
Method
- Sift the dry ingredients into a bowl and mix.
- Mix the wet ingredients together.
- Pour the wet mix into the dry mixture and mix well.
- Pre-heat a pan to medium low heat.
- Pour 1/4 of the batter onto the pan and cook until the whole pancake is dry, no need to flip.
- Repeat with the rest of the batter.
- Spread the vegan butter on the pancakes, then fill with crushed peanuts, creamed corn, crushed Weet-Bix Original Cereal, and sweeten to taste.
