Weet-Bix Mung Bean Parfait

Ingredients
- 250g red mung bean
- 3 cups water
- 1/4 cup raw sugar
- 10 bricks Weet-Bix Original Cereal/li>
- 3 cup So Good Soy Regular
Toppings
- 5 bananas
- 10 medium-large strawberries
Method
- Soak the red mung bean in water overnight.
- Place the red mung bean and 3 cups of water in a pot and bring to a boil, then continue to cook on medium low heat until soft.
- Mix in the raw sugar and 1/2 cup So Good Soy Regular. Set aside and let cool.
- Layer your glass with Weet-Bix, red mung bean paste, and chopped fruit, then pour the So Good Soy Regular before you eat.
