Strawberry Muffin

Ingredients
Wet Ingredients:
- 250g strawberry
- 3/4 cup raw sugar
- 1/4 cup canola oil
- 1/2 cup So Good Almond Vanilla
Dry Ingredients:
- 2 cups wholemeal flour
- 2 tsp baking powder
- Pinch of salt
Toppings:
- 2 bricks Weet-Bix Original Cereal
Method
- Pre-heat the oven to 170 degrees celsius
- Place the wet ingredients into a blender and blend until smooth.
- Sift the dry ingredients into a bowl and mix.
- Pour the wet mix into the dry mix and fold in with a spatula.
- Pour into cupcake/small muffin cups baking tray and top with crushed Weet-Bix Original Cereal.
- Bake for 40 minutes or until the top of the muffins doesn’t sink when pressed down.
